Val delle Rose Il Ciliegiolo emerges from the untamed Tuscan coast of Maremma, where the esteemed Cecchi family passionately tends to this remarkable winery.
Created with the unique Ciliegiolo grape, pronounced cheeli-oh-JOL-oh, this red wine variety takes its name from the Italian word for "cherry." The vineyards, at 150 meters, boast feldspathic quartz sandstone soil, rich in siliceous elements. With a yield of 4 tons per hectare and a vine density of 5000 per hectare, employing the spurred cordon technique, the grapes undergo a meticulous 15-day maceration with extended skin contact. The fermentation process is carefully temperature-controlled in small stainless steel tanks at 25°C, ensuring the optimal development of this unique varietal.
Ciliegiolo has very intense aromas with mineral notes, accompanied by well-defined cherry and plum.
Pair with hard cheeses and charcuterie, red meats, pork, beef, duck, and gamey meats.
