This ancient technique, coupled with minimal human intervention, pays homage to the historical roots of winemaking while allowing the wine's intrinsic qualities to shine. Enrico Rivetto's vision for this wine was to rediscover the ancient way of vinification, where blending different vintages was a necessity.
