Crafted with precision, Ottin Pinot Noir undergoes a manual harvest in crates, followed by instant cooling in a refrigeration room. The winemaking process includes pre-fermentation cold maceration and approximately 10 days of alcoholic fermentation with punch-down and pump-over cap, utilizing wild yeast for a distinctive character.
Aged for 12 months with 45% of the wine maturing in barriques and the remaining 55% in 30/20 Hectoliters oak casks.
