Finca Torremilanos Montecastrillo Rosado, a still pink wine from Ribera del Duero DO, showcases the essence of 100% Tempranillo. The grapes undergo manual harvesting from estate-owned vineyards, ensuring the pristine quality of the fruit. A cold soak on skins extracts the desired color, followed by racking of the must and alcoholic fermentation in temperature-controlled stainless steel tanks for 8-10 days at 18-20°C. This rosado is matured on fine lees, preserving its freshness by avoiding malolactic fermentation. The wine undergoes no aging in barrels and is bottled in the first week of January, capturing the vibrant character of the Tempranillo grape. The result is a fresh and bright rosado that pairs exceptionally well with vegetables, seafood, shellfish, sushi, salads, light pasta dishes, and risotto.
