Fattoria Poggerino presents Il Labirinto, a Toscana IGT red wine that is 100% Sangiovese grapes. The winemaking journey begins with a meticulous grape selection, where hand-harvested grapes from the last week of September undergo destemming and pressing. The alcoholic fermentation initiates naturally, without the addition of selected yeasts, proceeding at 28°-30°C. The entire vinification and maceration unfold in concrete tanks for approximately 25 days, involving pump overs and manual punch downs. Come December, the young wine is transferred to concrete tanks for malolactic fermentation. Aged for 10 months, Il Labirinto is then bottled. The result is a ruby-red wine that invites with red fruits on the nose and a straightforward, well-made Sangiovese profile. This wine embodies the straightforward drinking experience, offering a versatile pairing with cheese, charcuterie, caprese salads, grilled vegetables, poultry, and red meat. Certified organic.
