The vineyards, situated at altitudes ranging between 200 and 300 meters, benefit from mild winters and dry springs and summers, fostering the development of distinctive flavors. The mixed calcareous-silica soil provides an ideal foundation for the bush-trained Nero d'Avola vines, characterized by a density of at least 5,000 plants per hectare, ensuring a low yield per plant. The winemaking process involves meticulous de-stemming of the grapes and a maceration period at 28-30°C for 8-10 days, followed by malolactic fermentation. The wine undergoes a transformative aging journey, spending at least 18 months in fine oak casks and an additional 18 months in the bottle before its release.
